Atsara

Atsara (also achara) is a Filipino pickled relish or condiment made up most commonly of vinegared strips of papaya possibly mixed with carrots, ginger, and bell peppers. There are other versions based on other vegetables and plants like bitter gourd (ampalaya), bamboo shoots (labong), coconut pith (ubod), cucumber (pipino), daikon (labanos), and sea purslane (dampalit). Sometimes atsara is referred to as an ensalada (the Spanish term for salad). It is a popular accompaniment to many fried or grilled meat dishes.
